What is the best way to book trains in Europe?

I will be traveling through Europe with my girlfriend this summer. During my last in Europe in the train I was taking the Eurostar Paris-London and I booked directly through them. This time we will travel from Amsterdam-Paris-Rome-Venice-Genva. I could easily find Raileurope.com but I prefer to reserve my tickets directly from the carrier rail rather than by a broker or third party.
